Can 2 way dimming be operated with push button dimmer 4061E2PUDM?

No, unfortunately this is not possible as it is a 1 way mechanism. When power is lost to this mechanism it is restored to its off state which can ONLY be triggered by that switch and not an additional switch.
If Multi-way pushbutton dimming is required it is recommended to use the Wiser Micro Dimmer Module and Bell press mechanisms ( CLP5010-0001 and 60PBBP)
This setup allows a short press to turn on and off the dimmer while a long press will ramp up or ramp down the dimmer.( see attached for wiring diagram)

What series of mechs are used in the Saturn Zen plates for a Bell Press mech ?

The Zen plate use 60 series mechs , the momentary bell press mech is a 60PBBP or 60PBBPL if led is required.

Can I get an intermediate Saturn series mech with an LED?

No, these are not saturn PBL Blue LED intermediate switch available, but you can create one using a 2 way standard 60PBL 2 way push switches with LED's switch using a PDL600RM relay, as per the attached wiring diagram.
